{friendly} oatmeal cookies

it sometimes pays off to be really, really bored; because then you come up with little things like this. seriously though, oats are now at a whole new FANTASTIC level.

{Supplies} Mixing bowl, medium/large bowl, food processor, mixer, parchment paper (optional for easy cleanup,) oven, about 40 minuets  

{Ingredients}

1 & 3/4 cups walnuts, toasted

1 &3/4 cups almonds toasted

4 cups regular oats, divided

1 & 1/2 cup whole wheat flour

1 cup brown sugar

2 tsp baking soda

1 tsp cinnamon

1/2 cup pure maple syrup

½ cup of agave nectar

4 tbsp almond milk

7 tbsp coconut oil

4 tsp pure vanilla extract

1 & ¼  cup vegan chocolate chips (or normal chocolate chips)

{Directions} Preheat oven to 350F and grease a baking sheet. Place the walnuts and the almonds on the baking sheet. Toast nuts in oven for about 10-12 minutes, until golden in color. Watch carefully so as not to burn. When the nuts are toasted remove from oven and cool for a few minutes. Dump nuts and half of the oats into food processor and process until just finely ground. In a large sized bowl, mix together the flour, cinnamon, and brown sugar. With a mixer, mix the nuts/oats and the dry mixture together until fully combined. In a small bowl add the coconut oil and microwave for 20 seconds to soften (if necessary). In the same bowl, stir in the maple syrup, agave nectar, almond milk, and vanilla. Add to the dry mixture. Mix until the mixture is thoroughly combined. Mix in the remaining 2 cups of oats by stirring or with hands. Fold in the chips. Take about 2 tbsp of dough, make a ball, and then flatten with fingers. Place on cookie sheet. Repeat. Bake for 10 minutes at 350F and no longer. Remove from oven and let sit on baking sheet for 2 minutes before placing onto a cooling rack. Makes a lot, even after you eat the dough :)
