summer salad.

The sun {finally} came out so it is starting to feel like summer! Here is a great summer time salad that is jammed packed with protein, good stuff, and freshness. It is delicious served hot or cold. I assure you, I will be making this well into the fall. 

supplies: large skillet, appetite 

ingredients: 1 tablespoon of butter (normal or "earth balance"), 1 teaspoon evoo, 1 cup of diced red onion, 1 garlic clove minced, 1 package of frozen lima beans thawed, 1 cup of fresh or frozen corn, 1 cup of cherry tomatoes halved, 2 tablespoons of chopped fresh basil, 1 tablespoon of red or white balsamic vinegar.

Heat the butter and oil in a large skillet over medium high heat. add the onion, and saute for 5 to 7 minutes until the onions begin to brown. add the garlic and cook one minute longer. 

stir in the lima beans and saute for 5 minutes. add the corn and tomatoes, and saute 1 minute longer (you don't want the tomatoes to collapse.) remove from heat and stir in the parsley, basil, and vinegar. serve warm or chilled. 

ohh this would be perfect for a picnic. lets go!
