cup a cake

So many spring birthdays. I've whipped up these quite a bit. Who would have thought a "back of the box" recipe would be so easy and delicious. The frosting is literally "icing on the cake."

Supplies: mixer, big bowl, muffin tins, muffin cups, ice cream scoop for batter 

Ingredients: {cake} 2 c. sugar, 1-3/4 c all purpose flour, 3/4 c (Hershey's) cocoa, 1-1/2 tsp. baking powder, 1-1/2 tsp. baking soda, 1 tsp. salt, 2 eggs, 1 c. milk, 1/2 c. vegetable oil, 2 tsp. vanilla extract, 1 c. boiling water, sprinkles  

{Maria's frosting}1 stick of butter, 1 can of sweetened condensed milk, 1/2 unsweetened cocoa (make it easy, use the Hershey's above) 

Steps: Heat oven to 350F. Prepare muffin tins. Combine dry ingredients in a large bowl. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 min. Stir in boiling water (batter will be thin.) Pour into cups. 

Bake for about 22-25 minutes or until toothpick comes out clean. Cool. Frost. Makes about 28.
